Add lab 02 - GPIO exercises

Merge Request Overview

This merge request adds the exercises for lab 02 - GPIO and deletes PAC and bare metal. These are too much for the lab and seem not to be fully compatible with the RP2040. I suggest moving them to a tutorial, I opened issue #17 for this.
